Water boils at a lower temperature as altitude increases — roughly 1°F (about 0.5°C) cooler for every 500 feet of elevation gain. Since boiling-water canning relies on maintaining boiling temperature for a set time to destroy spoilage organisms, a process that's perfectly safe at sea level may not get hot enough for long enough once you're above 1,000 feet. USDA and the National Center for Home Food Preservation (NCHFP) solve this by extending the processing TIME rather than trying to raise the temperature, since boiling water can't get hotter than its (altitude-reduced) boiling point no matter how long you leave it on the heat.

Pressure canners work differently: the sealed pot lets you raise the temperature above boiling regardless of altitude, so instead of adding time, you adjust the PSI (pounds of pressure) to compensate for the lower atmospheric pressure at elevation. Weighted-gauge canners only offer a few fixed settings — typically 5, 10 and 15 lb — so their altitude table has just two coarse steps (10 lb up to 1,000 ft, 15 lb above it). Dial-gauge canners can be set to any exact PSI, so their table uses finer 2,000 ft bands (11/12/13/14 lb) to match the exact pressure your elevation requires.

Pick a canning method and the tool applies the matching altitude band. Boiling Water Bath adds a flat number of minutes to the sea-level time you enter: nothing up to 1,000 ft, +5 to 3,000 ft, +10 to 6,000 ft, +15 to 8,000 ft, and +20 above that. The two pressure modes ignore time entirely and return a pressure instead — Pressure Canner (Weighted Gauge) gives 10 lb up to 1,000 ft and 15 lb above it.

Pressure Canner (Dial Gauge) is the finer table, stepping 11, 12, 13 and 14 lb across 2,000-foot bands, which is why it needs a canner you can hold at an exact pressure. The base processing time field only appears in Boiling Water Bath mode, and it has to come from a tested recipe — nothing here validates it. Enter your real elevation in feet, because a few hundred feet either side of a band edge changes the answer.

Two honest limits. USDA publishes two boiling-water columns, and the +5/+10/+15/+20 increments shown here are the ones for processes of 20 minutes or less; processes longer than 20 minutes call for larger increases of +10/+20/+30/+40, so check the published table if your recipe runs long. The dial-gauge table also stops at 14 lb, and above 8,000 ft the tool shows a warning rather than the higher figure USDA specifies for that band.

Do I need to add time to water bath canning at 2,000 feet?

Yes. Anything above 1,000 feet gets an increase, and the 1,001–3,000 foot band adds 5 minutes to the sea-level time in this tool. Below 1,000 feet nothing is added. Enter the time from your tested recipe, not one somebody already adjusted.

What pressure should a weighted gauge canner run at 5,000 feet?

15 pounds. Weighted gauges only offer fixed weights, so the table has a single step: 10 lb from sea level to 1,000 feet, 15 lb everywhere above. There is no intermediate setting, which is why weighted canners over-process slightly at moderate elevations.

Why does a dial gauge use a different pressure than a weighted gauge?

A dial gauge can be held at any exact pressure, so its table steps 11, 12, 13 and 14 pounds across 2,000-foot bands to track your elevation closely. A weighted gauge can only jump to the next available weight, so it steps coarsely.

Does the altitude adjustment cover venting and come-up time?

No. The tool changes only the processing time or the pressure setting. Venting the canner, come-up time, the natural pressure drop afterwards and the cooling period all follow your recipe and canner manual unchanged, whatever your elevation.

My recipe already lists a high-altitude time — should I adjust it again?

No. Apply this once, to a sea-level base time. If your source already gives times or pressures for your elevation, use those directly. Stacking an adjustment on top of an adjusted figure over-processes the food and wrecks the texture.
