계산 원리

Every conversion routes through a fresh-yeast baseline. Your amount is first turned into grams, then scaled to fresh yeast — active dry doubles, instant triples, and sourdough starter is divided by twenty — and the four equivalents are read back off that baseline as fresh, fresh ÷ 2, fresh ÷ 3 and fresh × 20. Volume entries are converted with per-teaspoon densities of 5.6 g fresh, 3.1 g active dry, 3.1 g instant and 4.8 g starter, with a tablespoon counted as three teaspoons.

Source yeast type is the input that changes everything, since it sets both the density used for teaspoons and the ratio applied. It defaults to Active dry with 10 grams. Pick the type printed on the packet you actually own, not the one your recipe assumes. The headline shows instant when your source is active dry and active dry otherwise, while the table underneath always lists all four types side by side with their weights, volumes and handling notes.

These are the round industry ratios, not laboratory values; real cell counts differ between brands and with the age of the yeast, and fresh yeast loses strength within a fortnight. The starter figure assumes a lively 100 % hydration culture, and the tool does not rebalance your dough — you must cut recipe flour and water by half the starter weight each. Swapping types keeps the rise power roughly equal but not the schedule, since sourdough ferments far more slowly than commercial yeast.

How much instant yeast replaces a 7 g sachet of active dry?

About 4.67 g, or roughly one and a half teaspoons. The 7 g of active dry is worth 14 g of fresh yeast, and instant is a third of fresh. In practice most bakers simply use two-thirds of the active dry quantity.

Is instant yeast the same as rapid-rise yeast?

They are treated as one product here, listed together as Instant / rapid-rise, and substitute one for one by weight. Both are milled finer than active dry, so they hydrate on contact and can be stirred straight into the flour without proofing first.

How much fresh yeast equals a teaspoon of instant?

A teaspoon of instant is 3.1 g by this tool's density, which triples to 9.3 g of fresh cake yeast. Crumble it into the flour or dissolve it in the warm liquid before mixing, as the results table notes for that type.

How much sourdough starter replaces commercial yeast?

Twenty times the fresh-yeast weight. So 5 g of active dry equals 10 g of fresh and therefore 200 g of starter. Because that starter is half flour and half water, reduce the recipe's flour by 100 g and its water by 100 g.

Do I still need to proof active dry yeast first?

The notes column says yes: dissolve it in 38–43°C water for five to ten minutes before mixing. Instant and fresh do not need it. Proofing also doubles as a freshness test, since dead yeast will not foam in warm water.
